Tiered Ruffled Cake

This beautifully ruffled cake was put together for my mother’s 60th birthday. It was my first time making fondant ruffles, and I have to tell you, it took quite a few tries for me to get the hang of it.

The only inedible part of this cake were the borders. I have a funny story about the border (except maybe only my science/math oriented readers will laugh). When I went to buy the border, I took the roll to the worker to cut and I told her I needed enough to wrap around a 12″ cake. She takes out the measuring tape, measures up to 12″ and loops it into a circle. It was a very tiny circle. So I tell her “Let me re-phrase, I meant a 12″ DIAMETER, so we need the circumference.” This is where school came to play because I asked for her calculator, punched in 3.14*12 (pi x diameter for the circumference) and got the correct length to be cut! Lesson? Math comes in handy 🙂

    • Hi Judith! Thank you for the comment. The ruffles were made my thinly rolling out fondant and then pressing the rolling pin along one of the edges of the fondant to create a ruffle effect. You then start placing the ruffled fondant layer by layer on your tier. By ruffling the edge of the fondant, it eliminates the need to manipulate the fondant itself on the cake. Does that make sense?   5. I love it! My question is, did you attach the ruffles onto buttercream or did you use fondant on the cake? How does it attach?

    • Hi! thank you!! I made the ruffles with fondant! the secret is to roll it out really thin so that it’s light. I attached it with water 🙂

  6. Do you have to attach the ruffles to fondant or will it stay without it and just to the butter cream?

    • Hi!

      You will have to attach to the fondant with either a little bit of water, or food glue! It will stick onto buttercream, but if it has crusted over, you will have to dampen the surface with a little bit of water (apply with a brush or spray bottle). Hope this helps!

    • hi! I actually used edible silver leaf for that tier 🙂
